About 30 minutes total elapsed time, including 5 minutes for soaking, resting or cooling. Times are estimates; chilling for cold service and preparing already boiled ingredients require additional time where noted.

Sooji halwa is a manageable warm sweet when you want one fresh dish rather than a large mithai menu. Roast the semolina patiently before adding liquid. This water-based version keeps the ingredient list simple, while your family can decide whether and how it belongs on the Dhanteras offering plate.

Ingredients

  • ½ cup sooji or semolina (about 90 g)
  • ¼ cup ghee
  • ⅓ cup sugar, adjust to taste
  • 1½ cups water
  • ¼ tsp ground cardamom
  • 1 tbsp chopped nuts or raisins, optional

Method

  1. 1

Measure all ingredients before heating the pan. Warm the water and sugar in a small saucepan until the sugar dissolves, then keep the liquid hot.

  2. 2

Melt the ghee in a heavy pan over low-medium heat. Add the sooji and stir continuously, scraping the base.

  3. 3

Roast until the grains smell nutty and become lightly golden. Reduce the heat if any part starts browning quickly.

  4. 4

Lower the heat and add the hot sweetened water carefully in stages, keeping your face and hands away from steam and splashes. Stir steadily to break up lumps.

  5. 5

Add cardamom and optional nuts or raisins. Cook gently until the sooji absorbs the liquid and the halwa gathers softly around the spoon.

  6. 6

Turn off the heat, cover and rest five minutes. Stir once and serve warm in clean bowls; set aside a separate offering portion if your family follows that practice.

Helpful tips

  • Keep the water hot so it incorporates more smoothly, but pour cautiously.
  • Do not serve immediately after pouring liquid; allow the grains to swell and soften.
  • Contains wheat and dairy; optional nuts should be labelled.

Plan ahead

Roast and cook this small batch near serving time. The five-minute covered rest is additional to prep and cooking. Refrigerate leftovers promptly instead of leaving moist halwa beside the puja setup for the evening.

Common questions

How can I avoid lumps in sooji halwa?

Measure the water first, keep it hot and add it gradually while stirring the roasted semolina. Use a heavy pan and keep the heat low during the addition.

Is this a milk-based halwa?

No. The recipe uses water. Milk changes flavour and handling; it should not be treated as an invisible ingredient in this method.
