Ingredients
- ½ cup sooji or semolina (about 90 g)
- ¼ cup ghee
- ⅓ cup sugar, adjust to taste
- 1½ cups water
- ¼ tsp ground cardamom
- 1 tbsp chopped nuts or raisins, optional

Measure all ingredients before heating the pan. Warm the water and sugar in a small saucepan until the sugar dissolves, then keep the liquid hot.

Melt the ghee in a heavy pan over low-medium heat. Add the sooji and stir continuously, scraping the base.

Roast until the grains smell nutty and become lightly golden. Reduce the heat if any part starts browning quickly.

Lower the heat and add the hot sweetened water carefully in stages, keeping your face and hands away from steam and splashes. Stir steadily to break up lumps.

Add cardamom and optional nuts or raisins. Cook gently until the sooji absorbs the liquid and the halwa gathers softly around the spoon.

Turn off the heat, cover and rest five minutes. Stir once and serve warm in clean bowls; set aside a separate offering portion if your family follows that practice.
