Sabudana Vada

This sabudana vada recipe uses already boiled, cooled potatoes and fully soaked pearls. Keeping the mixture fairly dry helps the patties hold together. Allow separate time for the soak and for boiling potatoes if they are not ready; the listed cooking time covers frying.

Ingredients 🧂

  • Sabudana1 cup, soaked until soft and drained
  • Potato1 cup, boiled, peeled and mashed
  • Peanut powder¼ cup, roasted
  • Green chilli (optional)1, finely chopped
  • Ginger (optional)1 tsp, finely grated
  • Coriander (optional)2 tbsp, chopped
  • Lemon juice1 tsp
  • Sendha namak½ tsp, adjust to taste
  • Peanut oil or permitted frying oilenough to cover the patties

Method 👨‍🍳

    Rinse and soak the sabudana according to its packet. Check that all pearls crush easily without hard centres, then drain thoroughly.

    Mash the cooled boiled potatoes until smooth. Add sabudana, peanut powder, salt and the optional chilli, ginger and coriander.

    Add lemon juice and mix by hand until a small portion holds together. Avoid adding water to the mixture.

    Shape 10–12 small flat patties about 1 cm thick. Check the edges for cracks and press them closed.

    Heat oil over medium heat and test one small patty first. It should bubble steadily and hold together; adjust the heat before frying more.

    Lower an uncrowded batch into the oil carefully, turn gently and fry until evenly golden and crisp. Drain with a slotted spoon and serve hot.

💡 Pro tips

  • Do not fry pearls that still have hard centres, and keep water away from hot oil.
  • If the test patty breaks apart, check that the pearls are drained and mix in a little more mashed potato.

Plan ahead

Soak the pearls and boil potatoes ahead, refrigerating prepared potatoes promptly. Shape closer to frying and keep uncooked patties refrigerated while waiting.

Common questions

Why does sabudana vada fall apart?

Too much moisture or too little potato binder can weaken the patty. Drain the pearls well and fry one test piece before a full batch.

Can I use raw potato in this recipe?

No. This version uses smooth, boiled potato to bind the patties; boil and cool it before mixing.
